menu for the fifth anniversary Grand

Each course has been designed to reveal the majesty of the culinary
treasures native to Oregon. The five acclaimed Grand Dinner
chefs understand that the allure of the Oregon truffles resides
not only in their singular flavor, but also in the alchemical
magic that awaken new tastes and aromas in everything they touch.

Wines for the dinner, chosen from Oregon's wealth of extraordinary
vintages, are thoughtfully paired to bring out the flavors of
each dish. Truffles and wine share the characteristics of terroir,
and each wine pairing is designed to enhance appreciation and
celebration of those distinctive qualities of place.

                  About the Oregon Truffle Festival
Now in its fifth year, the Oregon Truffle Festival is the only
event of its kind in North America and showcases a truly unique
                  culinary treasure. Oregon
plays a key role in the growing international truffle industry,
through both the focal point provided by the Oregon Truffle
Festival, and through decades of research on truffles at Oregon
State University (OSU). Many of the world's most successful
truffle researchers and farmers received their graduate and
postdoctoral training at OSU, including Dr. Carlos Colinas and
Christine Fischer, now returning to Oregon to teach in the Festival
                  Seminars.
                Registration
